So with saying that I am excited to share these Pumpkin Chip Date Balls with you! They are super quick, tasty, and you will have little (and big) hands reaching into the pan for more.
They are that good.
Pumpkin Chip Date Balls
10 dates, pitted
1 cup unsweetened coconut flakes
1/2 cup real creamy peanut butter
1/2 cup almond meal
1/4 cup pumpkin puree
2 Tablespoons hemp protein powder
2 Tablespoons ground chia seed
2 Tablespoons flax seed meal
1 teaspoon ground cinnamon
1/4 cup enjoy life mega chunks
Put all ingredients except chocolate chunks into a food processor. Pulse until smooth and creamy. Add chocolate chunks. Pulse until broken up amongst ball batter.
Roll batter into 1″ balls. Makes around 20.
Make these on Sunday night and enjoy these throughout the week! Replace your “treats” with this healthy snack.
